Banana Bread Chia Muffins



Hallo meine Lieben!

Heute gibt's mal wieder etwas Gesundes zu backen.
Ich wollte ja schon immer mal dieses "Banana Bread" testen. Bis jetzt bin ich aber komischerweise noch nie dazu gekommen.

Deswegen hab' ich mich diese Woche mal an die Rezept-Entwicklung gemacht und ein bisschen in der Küche herumexperimentiert.

Das Ergebnis: Banana Bread Chia Muffins (...und ein klitze-kleines Chaos in der Küche)


Sie eigenen sich perfekt als gesundes Dessert oder auch als pre-workout Snack beim Morgentraining! Allerdings schränke ich dann den restlichen Tag das Süße etwas ein.

Für 6 Muffins braucht Ihr:

2 Eier
2 Bananen
1 EL Öl
1 EL Honig
2/3 Becher Chia Samen
1/3 Becher Mehl
1/2 TL Zimt

Zuerst trennt Ihr die Eier und schlagt das Eiklar zu einem festen Schnee auf. Dann mixt Ihr die Dotter, den Honig und das Öl zusammen. Die Bananen zermatscht Ihr mit der Gabel und rührt sie löffelweise unter. Anschließend kommen Chia Samen und Mehl hinzu. Ihr mixt wieder gut durch und lasst die ganze Sache kurz stehen (Dann ziehen die Samen ein bisschen Wasser und Ihr könnt im Notfall noch etwas Milch zugeben. Bei mir war es nicht nötig). Zuletzt den Zimt einrühren und die Schnee unterheben. Die Masse füllt Ihr in 6 Muffinformen. Wenn Ihr wollt, könnt die Muffins noch mit Nüssen oder Schokosplittern bestreuen. Gebacken werden Sie bei 150°-180°C etwa 15-20 Minuten.

Father's Day special...Daddy's guest post



On the occasion of Father's Day I talked my Dad into writing a guest post for this blog.
He isn't quite a genius when it comes to cooking (there's a reason why my mom cooks everyday) but when I was little I really enjoyed his noodles with sour cream and ham every Tuesday.

So a big “Thank you” to you Daddy and I hope all of you like it!

Hi folks!

This is Andrea’s dad!
Today I proudly present my favorite recipe: a typical Austrian dish called “Reisauflauf” which is basically baked rice with eggs and raisins. (Remark by my daughter: “This is not a real 'Reisauflauf' it's your version of it!”)

I like it so much because I can do it on my own whenever I want. Moreover it tastes pretty good and is loaded with energy for my endurance workouts.

Here’s the how-to:
Start with cooking up the milk because it will take exactly the amount of time you will need for preparing the rest. Keep an eye on it...burnt milk smells awful.
Then mix sugar, eggs and raisins until it’s combined well.





As soon as the milk is boiling pour in the rice and keep stirring to avoid scorching. The rice will absorb the milk and when it has a thick consistency turn off the heat and continue stirring until boiling stops.


Next add in the egg sugar mix and blend well. Place the rice batter in a greased pan and bake it for about 40mins at 150°C [300F].



Afterwards remove it from the oven, cut it into pieces and serve it with apple sauce (I really enjoy raspberry syrup with it!).



And at the end...the ingredients summed up:

3 cups of rice
2 l milk
3 tbs sugar
3 eggs
1 cup of raisins

As you can see in the pictures my daughter decorated her serving with more raisins and a cherry.


I hope you’ll manage otherwise there is pizza service. ;)

My favorite pizza...fruit pizza




Last week I really had a sweet tooth….I cooked several desserts and eat quite a big amount of fruits. They all were delicious (and healthy, for example a melon sorbet…)

…but today I wanna share with you another one of my favorites.
Here comes the fruit pizza!
It’s sooo easy to prepare and offers a variety of micronutrients which benefits your health.


Let’s get started:
Take a wholegrain tortilla and place it on a bigger plate. (That was hard right? :P)


Spread one tablespoon of crunchy peanut butter on it. Please make sure that the penaut butter contains no added sugar or additives.




 Then it’s time to cut up some fruits. I sliced up about 5 strawberries, a little bit of ananas, a banana, and half an apple. Place them on your „pizza dough“ also known as wholegrain wrap.

You can do  a special order or just throw them on., it’s really up to you. As you can see in the pics I placed the apple in one quater as well as the strawberries, the banana and the ananas.



Next, for some extra flavor add several toppings. I sprinkled my ananas quater with a little bit of grated coconut (about one tablespoon) and my apple quater with a pinch of cinnamon. Moreover I added some blueberries to the strawberries and topped the banana quater with dark chocolate.

For Mother's Day...buttermilk terrine with berry sauce




As you all know Mother‘s Day is right around the corner. Today I wanna help you to say: „Thank you mommy!“


So to address my mom:  Since I moved out my mom and I don‘t  spend that much time together. But whenever I come home we’re going shopping or grap coffe and talk about everything that happend.  So I just wanna say thank you for all! (…and especially for teaching me how to cook! :P )

But you all know…this is a foodblog…
…that is why we say thanks with a delicious and healthy dessert for all our moms.
May I introduce the buttermilk terrine with berry sauce.
It’s sugarfree, it’s low-fat and there are no cooking skills required! Your mom will love it!


Here are the directions:


 Place to cups of buttermilk in a mixing bowl. Grate the peel of one organic lemon and squeeze it afterwards. Then add the lemon zest to the buttermilk and pour the lemon juice in a sauce pan.


Soak three leaves of gelatine in cold water for at least five minutes. Then drain it and solve the gelatine in warmed juice.
Then add the juice with the disolved gelatine leaves to the buttermilk. Be careful it should be just warm not boiling hot. Blend everything together and fill it into tartelette moulds or a muffin tin or whatever else you have at hand.


Place your buttermilk terrine in the fridge and let it sit for at least four to five hours.
Meanwhile prepare the berry sauce.
Heat up about three cups of frozen berries. And cook on low heat until everything is cooked to pieces. Don’t forget to stir every once in a while. That is all! Let it chill until it’s needed.


As soon as the terrine is hard you can carefully remove them from the moulds.
I placed three, one above the other, on a plate drizzeled it with the berry sauce. To decorate a little more I chose some flowers and fondant daisies.



At the very end I just want to add another „thank you“: So special thanks to my friend who gave me this wonderful cookbook from which I got the recipe.

On my birthday....homemade frozen yogurt!




Last week it was quite sunny and hot outside. So a friend and I decided to get frozen yogurt to “celebrate” the beautiful weather.
Since there were no lectures but both of us had to get up in the morning anyways (my boyfriend left for vacation), we met quite early as well. Too early!
We didn’t get froyo because the shop was still not open at that time. But…for all those who are wondering…we got ice cream instead



To cut a long story short…I decided to do my own frozen yogurt at home.
You can take exactly these topping you like (without any compromises ;) ), it’s cheaper and healthier and it is soo much fun!

So let’s play iceman…
Here are the directions:
Line a seeve with two to three sheets of paper towel and pour in 2 cups of Greek yogurt. Make sure that the paper towel won’t tear if it gets wet, because you wanna extract all the water from the yogurt. This will take at least 3 hours. Save some time and perpare it the night before and let it sit overnight.



Afterwards place the yogurt in big bowl. If you want you can add one tablespoon of honey but I skipped that part.
Separate two eggs and beat the egg whites until they’re white and stiff. Add it to the yogurt and carefully fold in. Then place your frozen yogurt in the freezer and let it sit for two to three hours.





Now you can prepare the toppings. Just cut all of your fruits (or anything else) in bite-size chunks. I got a mango, ananas and frozen raspberries.


Next I placed a little bit of my frozen yogurt in a bowl and sprinkled it with the fruits. As you can see in the pics I used a pipping bag…you know fot that extra glamour. But you can spoon it as well.

Pre-workout pancake breakfast




 If you follow my blog for a while now you already know I’m a little breakfast addict. But since I can’t count me as a morning person I always do my workout midmorning after my breakfast.
So I always choose a breakfast which gives me enough “fuel” but won’t make me nauseous during my workout.

And…today I wanna share one of my favorites with you.
Only a few ingredients, wholegrain and sugar-free! Here are the pre-workout pancakes.

The banana and the wholegrain oats in it will give you enough complex carbohydrates to kill your workout and will be burnt right away. Moreover you get an adequate dose of protein because of eggs and soy/almond milk.
Top the pancakes with a bunch of fruits (check the recipe down below) and you have an almost perfect breakfast to start your day full of energy.


So but now…let’s do something
Here are the directions:

Place one cup of wholgrain oats, one entire egg and one cup of soy/almond milk in a blender. Peel a banana and add in. If you have a sweet tooth you can add one tablespoon of honey.
Blend everything together until it is smooth and has the texture of thick pancake batter.


Heat up a pan and pour in one tablespoon of oil. Place a small amount of batter in the pan and spread it slightly by using a spoon. 



Bake four of them for about 3-5 minutes, then flip and bake for another 3-5 minutes. Remove the pancakes from the pan, place them on a lined baking tray or plate and keep them warm.
Then add one teaspoon of unsweetened cocoa powder to the batter blend again. Now bake another four pancakes.


Place your pancakes in alternate order on a plate. Top them with fruits of your choice (as you can see in the pictures…I use some mixed berries) and a dollop of cottage cheese.




And here’s a special tip for all those who perfer to sleep a little longer:
Double or triple the amount of the ingredients and do more pancakes at one go. Freeze the leftover pancakes and pop them in the toaster next morning.
0% effort - 100% fresh pancakes.
