Banana Bread Chia Muffins



Hallo meine Lieben!

Heute gibt's mal wieder etwas Gesundes zu backen.
Ich wollte ja schon immer mal dieses "Banana Bread" testen. Bis jetzt bin ich aber komischerweise noch nie dazu gekommen.

Deswegen hab' ich mich diese Woche mal an die Rezept-Entwicklung gemacht und ein bisschen in der Küche herumexperimentiert.

Das Ergebnis: Banana Bread Chia Muffins (...und ein klitze-kleines Chaos in der Küche)


Sie eigenen sich perfekt als gesundes Dessert oder auch als pre-workout Snack beim Morgentraining! Allerdings schränke ich dann den restlichen Tag das Süße etwas ein.

Für 6 Muffins braucht Ihr:

2 Eier
2 Bananen
1 EL Öl
1 EL Honig
2/3 Becher Chia Samen
1/3 Becher Mehl
1/2 TL Zimt

Zuerst trennt Ihr die Eier und schlagt das Eiklar zu einem festen Schnee auf. Dann mixt Ihr die Dotter, den Honig und das Öl zusammen. Die Bananen zermatscht Ihr mit der Gabel und rührt sie löffelweise unter. Anschließend kommen Chia Samen und Mehl hinzu. Ihr mixt wieder gut durch und lasst die ganze Sache kurz stehen (Dann ziehen die Samen ein bisschen Wasser und Ihr könnt im Notfall noch etwas Milch zugeben. Bei mir war es nicht nötig). Zuletzt den Zimt einrühren und die Schnee unterheben. Die Masse füllt Ihr in 6 Muffinformen. Wenn Ihr wollt, könnt die Muffins noch mit Nüssen oder Schokosplittern bestreuen. Gebacken werden Sie bei 150°-180°C etwa 15-20 Minuten.

Happy Halloween!

Halloween Kürbis im Dunkeln

Hallo Ihr Lieben!

Freut Ihr euch schon auf Halloween? Ich persönlich, bin ja weder ein „Süßigkeiten-Sammler“ noch verkleide mich besonders gerne. Aber Dekoration muss sein…zu Halloween, zu Weihnachten, zu Ostern,…immer! Auch wenn mein Freund nicht besonders glücklich darüber ist.
Meine Lieblingsdekoration zu Halloween ist natürlich – wie könnte es auch anders sein als Steirerin – die Kürbislaterne. Aus diesem Grund machen wir heute auch eine. Zusätzlich gibt’s gesunde Rezepte zur Verwertung der Reste. So könnt Ihr den ganzen Kürbis verwerten und müsst nichts wegwerfen.

Seeds at their best...homemade superfood seed bread




Remember...? St. Patrick’s Day post included some croutons where I used my homemade chia bread.
Yeah…I got a lot of request for the recipe!

So…this is for you!
Today we’re baking homemade superfood seed bread. It’s great for breakfast because it keeps you full for a long time and you won’t get food cravings shortly after breakfast.
Moreover organic wholewheat bread and all the other ones can be quite expensive when you buy it at the grocery store. So…make it at home! It’s cheaper, it doesn’t contain additives and you know exactly where your ingredients came from.


My bread contents several different seeds which deserve the name “superfood”:


  • Chia seeds: 10g of fiber and almost 5g of protein in just two tablespoons! And that’s not all yet…the seeds absorb up to 10 times their weight of water. That’s what I call “superfood”.
  • Flax seeds: One ounce of this seeds contains 8g of fiber, 12 g of healthy fatty acids and a huge amount of magnesium. I love flax seeds because they enhance the taste of granola, salads and bread (duh!).
  • Sunflower seeds: This tiny seeds not only taste amazing they’re also a great source for vitamin E, copper and polyunsaturated fatty acids. I always roast them to make them even more crunchy and sprinkle them over almost all my food. 
 (Fun fact: I always nibble off all the sunflower seeds if they’re sprinkled on bread! It’s a mess! :P Comment down below if your doing the same!)
 



 So now…after this paragraph of educational information….time to head into the kitchen and fire up the oven.

Here are the directions:
Place about 500g of wholwheat flour in a big bowl. Add in a pinch of salt, one pack of dry yeast, half a cup of flax seeds, half a cup of sunflower seeds and half a cup of chia seeds. Stir until all the dry ingredients are well blended. 

Heat up the milk until it’s lukewarm. Add two eggs and one tablespoon of honey to the flour mix and pour over the milk. Then knead all together until it comes together to a ball.




Cover it and let it sit in a warm place for about one hour. It should double in size. (I always take a pot with hot water and place my bowl above and cover it with a kitchen towel. The warm and humid steam will do great work.)


Carefully remove the dough from the bowl and place it in a greased loaf pan. Let it sit for another hour.



Now it’s time to actually bake the bread! ;)
Bake it for 50 minutes at 150°-180°C [300-350F]. When your bread loaf is golden brown it time to heat up a little. Bake it for another 20 minutes at 200°C [390F]. This will make the crust extra crunchy. And at the end turn off the heat and you let your bread sit for another 20 minutes in the warm oven.


Remove your homemade bread from the loaf pan and let it chill a bit.
Done! You successfully baked your own superfood seed bread! :D

Happy New Year....with some snacks!





HAPPY NEW YEAR everyone!
I hope all of you had an awesome New Year’s Eve and great start into 2015.



I know it’s a little bit too late to come up with some snacks for the party…but there’s always the next year and the next party.

So…I spend New Year’s Eve at a party with my boyfriend and friends. It was so much fun and the fireworks were amazingly beautiful.

Usally, when I’m welcoming the New Year with my family we always had fondue. But at the end of 2014, since I had been invited to that party, I went for some handy and delicious snacks.
Ham&cheese croissants, cheeseballs and a walnut chickpea spread….sounds tasty, right? And…they’re perfect for a little bite between two glases of champagne.


Ready? Here are the directions:

For the croissants, slice up one small onion. Dice 100g of ham and 100g of raclette cheese into small cubes. I recommend a savory type of cheese but feel free to take any cheese of your choice. Then heat up a pan and pour in one tablespoon of oil. Stir fry the sliced onion. As soons as it turns slightly bown add the ham. Stir fry for another couple of minutes and turn down the heat afterwards.
Meanwhile you can roll out the puff pastry. Make sure that the pastry isn’t too cold otherwise it will break. (Room temperature works best.) Take a sharp knife und cut the pastry into triangles. Spread about one tablespoon of cheese and the roasted ham onion mix on the wide side of each pastry triangle. Then, beginning at the wide side, roll up the whole piece. (For better understanding see the drawing.) Place each croissant on a lined baking tray. Continue the process until the entire puff pastry is used up. Bake your croissants for about 15 to 20 minutes at 200°C.


Meanwhile you can prepare the walnut chickpea spread.
Put 200g of walnuts into a blender. Blend until they are finely grounded. Then add 400g of precooked chickpeas and a little bit of water. Blend again until it’s smooth. You can always add more water if it’s too crumbly. Place the spread into a bowl and season with salt, black pepper and a pinch of nutmeg. Store it in the fridge until needed.


To prepare the cheesballs mix 250g of cream cheese and 100g of crème fraiche together in a bowl. Make sure that all is combined well then season with black pepper. Put it in the fridge to chill about ten minutes. This will make it easier to form the balls.
Afterwards take two teaspoons, form a dumblings and roll each of them in herbs, black sesame or curry powder. Place each of your cheeseballs on a round shaped cracker and store it in the fridge again until it’s needed. If you want secure the balls with a toothpick or cocktail stick.
