Und bevor Ihr jetzt gleich weiterklickt, weil Ihr denkt das schmeckt scheußlich, erzähl' ich Euch mal warum ich diese Brownies so liebe: Weil sie den größten Schoko-Heißhunger auf gesunde Art stillen, weil sie so üppig schmecken es aber gar nicht sind und weil sie wirklich einfach und schnell zuzubereiten sind.

Seeds at their best...homemade superfood seed bread




Remember...? St. Patrick’s Day post included some croutons where I used my homemade chia bread.
Yeah…I got a lot of request for the recipe!

So…this is for you!
Today we’re baking homemade superfood seed bread. It’s great for breakfast because it keeps you full for a long time and you won’t get food cravings shortly after breakfast.
Moreover organic wholewheat bread and all the other ones can be quite expensive when you buy it at the grocery store. So…make it at home! It’s cheaper, it doesn’t contain additives and you know exactly where your ingredients came from.


My bread contents several different seeds which deserve the name “superfood”:


  • Chia seeds: 10g of fiber and almost 5g of protein in just two tablespoons! And that’s not all yet…the seeds absorb up to 10 times their weight of water. That’s what I call “superfood”.
  • Flax seeds: One ounce of this seeds contains 8g of fiber, 12 g of healthy fatty acids and a huge amount of magnesium. I love flax seeds because they enhance the taste of granola, salads and bread (duh!).
  • Sunflower seeds: This tiny seeds not only taste amazing they’re also a great source for vitamin E, copper and polyunsaturated fatty acids. I always roast them to make them even more crunchy and sprinkle them over almost all my food. 
 (Fun fact: I always nibble off all the sunflower seeds if they’re sprinkled on bread! It’s a mess! :P Comment down below if your doing the same!)
 



 So now…after this paragraph of educational information….time to head into the kitchen and fire up the oven.

Here are the directions:
Place about 500g of wholwheat flour in a big bowl. Add in a pinch of salt, one pack of dry yeast, half a cup of flax seeds, half a cup of sunflower seeds and half a cup of chia seeds. Stir until all the dry ingredients are well blended. 

Heat up the milk until it’s lukewarm. Add two eggs and one tablespoon of honey to the flour mix and pour over the milk. Then knead all together until it comes together to a ball.




Cover it and let it sit in a warm place for about one hour. It should double in size. (I always take a pot with hot water and place my bowl above and cover it with a kitchen towel. The warm and humid steam will do great work.)


Carefully remove the dough from the bowl and place it in a greased loaf pan. Let it sit for another hour.



Now it’s time to actually bake the bread! ;)
Bake it for 50 minutes at 150°-180°C [300-350F]. When your bread loaf is golden brown it time to heat up a little. Bake it for another 20 minutes at 200°C [390F]. This will make the crust extra crunchy. And at the end turn off the heat and you let your bread sit for another 20 minutes in the warm oven.


Remove your homemade bread from the loaf pan and let it chill a bit.
Done! You successfully baked your own superfood seed bread! :D

Indulgence...healthy and delicious desserts







Everybody likes a good dessert and to indulge once in a while. A piece of cake, a little bit of chocolate or a cupcake. It tastes delicious, right?

 
And…I can tell you great news:
1)      There are desserts which are delicious AND healthy at the same time. (Yes, you read right!!)
2)      I’m here to share the secret about healthy sweet treats with you! ;)

In this post I will give you two amazing and tasty recipes with health benefits.

First the “well-known” chia pudding.
Chia seeds are rich in fibers, protein and antioxidants. Moreover they contain 12 times more magnesium than broccoli and twice as much omega-3-fatty acids than 100g of salmon.

Second the homemade Granola light.
Less sugar, less fat, no additives and wholegrain oats. Do I need to say more?
 
Time to “cook”!


Begin with preparing the chia pudding. Place about two tablespoons of chia seeds in a small bowl or glass.
 

  
Pour in one cup of milk. I recommend using soy or almond milk because of the nutty taste. Stir a little bit until milk and seeds are well combined. Put the glass in your fridge and let it sit for about one hour.



Top your pudding with berries and nuts, take a spoon and indulge!
 


 Now it’s time for the Granola.


Melt about one tablespoon of butter and two tablespoons of honey on low heat. Stir once in a while to blend all together.


Then add three cups wholegrain oats. Toss everything and spread it on a lined baking tray. 

 

Place it in the oven and roast until it’s golden and crispy. This will take about 20-30 minutes at 180°C. Don’t forget to stir once in a while.
Remove from the oven, put your granola on a kitchen towel to cool and store it in a dry place afterwards. I recommend a lidded box or something similar.



Please notice that this recipe is just the basic

form. You can add any kind of nuts, dried fruits or use peanut butter to add more flavors.
That’s all! You can eat it with yogurt as a topping to your oatmeal or even wrap it as gift.
I prefer it with Greek yogurt, berries and some cashews (as you can see in the pics).



Just place about half a cup of Greek yogurt and some berries in a bowl. Sprinkle with a little bit of your Granola light and add some cashews.

3S...salmon sandwich on salad




Since we ate all quite a lot, and not that healthy (you remember…all the cookies, the chocolate and all this other delicious stuff) it’s now time to start our healthy diet again.
Means a whole lot of nutrients and less calories.


My advice,…salmon sandwich on salad.
Why? Here are some positive aspects:
Salmon is commonly known as healthy. But let’s take a closer look.
This nice fish is low in calories (174kcal per 100g) and contains nearly 20g of protein per 100g. Moreover, due to the fact that salmon is a sea fish, it contains a good amount of essential fatty acids, such as omega-3 and omega-6. These types are good for your heart (they prevent coronary heart diseases), your blood pressure and your blood vessels.
And…salmon contains a lot of vitamin D, which benefits your immune system and your bone health.


Before we start just one more thing ….please pay attention to the origin when getting your salmon!!! Make sure that every fish you buy is from certified sustainable fishing! For example look for the MSC logo.


So now…let’s cook.
Optional first step: Roast a handful of pistacchios. They are mainly for decoration but I think the taste quite nice in combination with the salmon and the salad.


Cut your salmon filet into small chunks and put everything in a bowl. Then add a bunch of chopped chives and the grated peel of one lime. (Check before if it’s unreated and the peel is eatable). Afterwards press out the juice, mix in and season it all with salt, black pepper. Set aside to marinate.


Meanwhile you can prepare the salad. Get some greens of your choice (I used iceberg lettuce) cut them and put all in a big bowl. For your dressing blend the juice of one blood orange, one tablespoon of mustard and a bit of vinegar together. Add a pinch of salt afterwards and pour it over your salad. Set aside.


Heat up a pan on low heat. Add one tablespoon of oil and your marinated salmon. Cook on low heat until it’s well done but still glassy orange.
Next take two to three slices of whole grain sandwich and toast it on both sides for a couple of minutes. Cut it in halves and place the salmon on it.
Serve your salmon sandwich with the roasted nuts and a bowl of salad!
