A healthy treat by the pool....vegan banana oat muffins



Yesterday we got an invitation to chill at the pool with a friend of my sweetheart. First I thought about bringing some cupcakes, but since it’s summer and quite hot outside I reconsidered.
My treats should be easy to carry, they mustn’t melt in the heat and of course they had to be delicious and healthy as well.
All these requirements summed up……here are the vegan, less sugar banana oat muffins.



Here’s what to do:
Beat up 80g of vegan margarine with an electric mixer add half a teaspoon of vanilla extract and a teaspoon of cinnamon. Beat again until it’s almost white. Combine 175g wholegrain oats, 50g raisins and 25g of wholegrain flour, add one tablespoon of baking powder and set it aside. Mash two ripe bananas with a fork and add them to the margarine. Blend well. Afterwards stir in the oat-flour mix by spoonfulls. If the dough is getting too tough pour in some rice or soy milk to get to a consistency like potato puree (as always). Line 6 moulds of a muffin tin with paper baking cups and spread the dough eaqually among them. Then bake until they are golden and slightly crusty at the top. It takes about 25-30 minutes at 150°-180°C. Put them on a plate carefully and let them cool completely.


For all those who have a sweet tooth (like me) and don’t want to give up sugar completely … I added lemon icing and some seeds.
Mix the juice of a lemon and some sugar to a slightly plumb but easy to spread mass. Frost your muffins with the lemon icing and sprinkle with some oats or seeds right afterwards.


Here's your healthy treat at a picnic, by the pool or anywhere else. Put them in a box and they are ready to go. You even can freeze them and eat one by one each day.
