Since all
students have holidays in February (at least in Austria, sorry for all those who don’t)
my boyfriend and I spend a few days with his parents. But since I have Rope
Skipping and mother & child sports classes twice a week I returned earlier.
To cut a
long story short….I was on my own which means cooking for only one person.
If you need
only one portion per meal it’s quite hard to estimate the correct amount of
ingredients…not speaking of these huge family-size packs you get at the grocery
shop.
That’s why
it could be easier to cook more but choose dishes which can be easily frozen
and heated up again.
And…here’s
one of them: A grilled leek tarte with camembert.
Great about
this healthy tarte is that you could eat it hot, warm and even if it’s cold it
tastes delicious. Cut in triangles it fits perfectly for a brunch or as an
appetizer.
The icing on
the cake? Health benefits!! Grilled leek is full of vitamin C and K, as well as
folic acid, potassium, calcium and magnesium. Moreover it contains allicin,
which is a sulphur compound with several health benefits. For example it may
reduce atherosclerosis, decreases blood pressure and has anti-thrombotic, anti-inflammatory
and antioxidative effects.
But enough
of all this theoretical stuff. Let’s cook!
First prepare the dough. I chose to make pizza dough. You can find the
recipe in one of my older posts by clicking the link.
When your dough is ready you can continue to
prepare the toppings.
Remove the outer leaves of your leek as well as
the hairy part and about one half inch at the very end. Cut it in thin slices
and rinse it quickly. Drain it and set it aside.
Heat up a pan and pour about one tablespoon of
olive oil in. Add the leek and stir fry until it’s a little brown. Turn off the
heat and season with salt, black pepper and a pinch of nutmeg.
Next slice up about 1 cup of camembert and set
it aside.
Roll out the pizza dough (about the thickness
of a finger or less) and spread a thin layer of olive oil on it.
Then sprinkle
the grilled leek on and top it with the cheese.
Pop it in the oven and bake your tarte until
the cheese is melted and the dough is golden brown. This will take about 20
minutes at 180°C. Then heat up to 200°C and bake it for 10 more minutes.
Remove it from the oven, add a little more
black pepper on top and let it chill for a couple of minutes. Afterwards cut it
in squares or triangles and they’re ready to eat.
If you wann freeze a little bit…let it cool
completely, wrap every portion in aluminium foil and place them in a freezer bag.
Now you can easily prepare one portion at a time without defrosting all the
other pieces.
For heating up the tarte again I recommend
popping it in the oven. 180°C and it will be ready in about 15 to 20 minutes.
