I recently
ordered a huge pack of parmesan in Italy. That’s why I was looking for
some new recipes which include parmesan. Not, that I was in a need of parmesan
recipes and if it wouldn’t be that odd I would eat parmesan straight as it
is…but I wanted to try some new dishes.
So I
discovered these parmesan biscotti which I wanted to try immediately.
These
biscotti taste delicious and I recommend them for those who don’t always want
something sweet as a snack.
Or…with a
nice packaging and a good bottle of wine it would be a cute little present.
So here are
the directions:
Combine 2 ¾
cups of flour, ½ a cup of grated mozzarella and 1/3 cup of grated parmesan in a
big bowl. Add in 3 tablespoons of cornstarch, 2 teaspoons of baking soda and
season with black pepper, rosemary and basil.
In a
separate bowl whisk together 1/3 cup of milk, 1 teaspoon oilve oil and 3 eggs.
Then add all the dry ingredients by spoonfuls until it comes together to a
ball. Let it sit for about 15-20 minutes.
Then portion your dough and form 4 rolls with a diameter of about 1-2cm.

Take a
sharp knife and cut each roll into little chunks. If your dough is too sticky,
dunk your knife in water before cutting each piece.
Next place the
biscottis onto a lined baking tray and bake until they’re nicely golden. This
will take about 20 minutes at 180°-200°C.
Special
tip: If you want you can add some pine nuts and/or dried tomatoes. This would
make the biscotti even more savory.
