Here are my little ghost cupcakes.
The recipe
is as easy as usual:
First blend
two egg yolks with 80g of butter and 90g of sugar together. In a separate bowl
beat up the remaining egg whites and set them aside. Mix 250g of flour with one
teaspoon of cinnamon, one teaspoon of nutmeg and one teaspoon of grounded
cloves. Add it to the egg yolk-butter mix by spoonfuls and pour in some milk if
your dough gets to dry. Then dice one apple and stir into the dough. Afterwards
fold in the egg whites and scoop your dough in a muffin tin. As always I
recommend using paper baking cups. Not only it’s pretty useful when getting
them out afterwards, but also it looks so fancy.
Bake your
muffins for about 20 minutes at 180°-200°C. Remove them from the oven and let
them chill on a plate.
And here’s
how to make the ghosts:
Beat up two
egg whites. But not as stiff as usal…the mass should be still creamy. Then add
a dash of lemon juice and granulated sugar. Blend again until little peaks show
up. Then fill your icing into a pastry bag. Line a baking tray and spread some
more granulated sugar on it. This helps to get the ghosts off easily.
Now apply
the icing in circular motions, creating little “towers” on the prepared baking
tray. (Hard to explain … it’s easier to look at the pictures!)
Bake your
ghost for about one hour at 50°C. They should be dry and crunchy on the outside. Carefully remove them and paint
the eyes using food coloring.
Then take
your chilled cupcakes and glace them with chocolate. Break a tooth pic into
halves and pin your ghosts onto the cupcakes.
Feel free
to do some more deco (with sprinkles or stuff) but I think they look fine like this.
