The "no time spicy almond bites"




We all know the problem when there's a DVD night or a invitation right around the corner but there's exactly NO time to prepare a suitable treat.
It happend to me last week. I was invited to an old friend. (Ok I admit….it was kind of a “self invitation”) Unfortunantely I had too less time to make some great cupcakes which I could bring her. So I decided to go for this quick and easy spicy almond bites.

Moreover these little bites are perfect as a crunchy side dish for your favorite mixed salad, tea time, or brunch.

Here’s the "how-to":

Unroll one pack of puff pastry. Then roast one cup of chopped almonds without any oil in a pan until they’re slightly brown. Afterwards put them on a plate to chill for a while. Meanwhile you can spread your favorite herbs and spices all over the puff pastry. I went for nutmeg, wild garlic, black pepper and a binch of salt as well as for some thyme and oregano. Then dice about 50g of Emmentaler cheese in tiny pieces and spread them over the pastry as well. At last add the almonds and roll up the whole thing carefully.

Next take a sharp knife, cut your roll into slices and place each of them on a lined baking tray. Don’t press too much while cutting in order to keep the round shape of the roll. It can be helpful to dip your knife into water before cutting each slice.


Afterwards bake your little bites for about 15-20 minutes at 200°C. Remove from the oven, let them chill for about 5 minutes and then arrange them nicly on a plate.

Ready to be eaten!!

And … for all the vegans: use vegan puff pastry and skip the cheese.

If you don’t eat them up at once, put them in a lidded box and store in a dry place. They will stay  fresh for about 5 days.



Special tip at the end: You can add other seeds and nuts as well as dried fruits or even mustard. Try what ever comes to your mind and don’t forget to send me a pic.
