Have a quick lunch ... the couscous salad bowl




Today I had to do a quick lunch because it was quite a stressful day. So I decided to go for a couscous salad bowl.

Couscous is a traditional North African dish made out of semolina. You can easily cook or prepare it for later on and it always tastes delicious. …as a salad, as a gratin or a quick side dish to meat or vegetables.


Here’s the recipe (makes two servings):
Put one cup of couscous in a big bowl and pour over two cups of boiling water. Set the bowl aside and let it soak until there’s no water left.

Meanwhile you can roast half a cup of cashews in a pan without any fat. As soon as they’re golden put them on a plate and let them chill. Cut a peach in small slices and roast them in the same pan. Put your slices aside as well.


Heat up one tablespoon of olive oil, then add in one glove of minced garlic and roast it slightly. Add in couscous and cashews and stir fry it for about five minutes. Afterwards season the mix with salt and black pepper.
Next wash two leaves of iceberg lettuce and place them on a plate. Spread the couscous mix onto it and decorate with the peach slices and some more cashews.


Special tip: If you want you can add ore veggies to your couscous. For example some tomatoes or bell pepper.
